Chicken Tortilla Soup in a Slow Cooker

This recipe was simple and very good.  I baked 4 chicken breasts in the slow cooker on a spiral of foil and then drained the liquid and fat.  This brought the weight down to just about a perfect pound of shredded chicken.

I used a can of chicken broth instead of the water for a total of two cans of broth.  I used 2 teaspoons of dried cilantro and then served with fresh cilantro.  Also served with shredded cheese and sour cream on the side.  I used mild enchilada sauce because of the folks bing served.  This made the dish flavorful but not spicy hot so it was a good choice.  If it is just Fikki and I next time I will go for a spicier version.

I will also use a larger oval crock pot.  I made this in the 4 Quart size and it was a bit fuller than the pot should have been.   I had extra time for this to cook so I allowed it to simmer for two more hours.  If this recipe is meant for just eight people...I gotta say those are some hungry eight people!!!
